Boiled Cake

Lesley’s Mum’s Boiled Cake – much tastier than it sounds!

 

2Eggs
450g
Dried fruit (you choose what)
50g Vegetarian lard or margarine
1 mug
Soft brown sugar
1 mug
Water
2 mugs
Self raising flour
1 tsp
Bicarbonate of soda and teasp of milk
1 tsp
Mixed spice


In a large saucepan, boil the fruit, sugar, vegetarian lard/marge and spice for 5 minutes. Put all the ingredients in cold and slowly bring to the boil.

Allow to cool – it’s all right if it is just warm.  Stir flour in slowly, otherwise it goes lumpy.

Dissolve bicarb in the milk and add to mixture.  Add beaten eggs.

Transfer to prepared cake tin and cook at 300/350F or 160/180C or Mark 3 or 4 for one and a half hours.  Check after an hour.

Note of caution – my dad always used to sneak in to open and slam the oven door during the cooking to make the cake sink in the middle.  He liked it like that!  So be careful with that door!
